Scrambled Eggs with Black Fungus and Pork - MuMu Confinement Recipe
Black fungus is known to nourish your yin and add moisture to your lung. It is also a source of both collagen and cellulose which aids digestion.
300g minced pork
50g Ginger Shreds
20g Black Fungus
3 tbsp sesame oil
3tbsp Shao Xing Wine
1 tbsp light soy sauce
1 tsp salt
1/2 tsp grounded pepper powder
Soak the Black Fungus until soft.
Thinly slice the softened Black Fungus, set aside for later.
Sauté the ginger shreds with sesame oil, stir fry minced pork with the above seasoning.
Add in eggs and stir fry until eggs are golden brown.
Add Shao Xing wine, stir well.
Add Black Fungus and 200ml water, bring to boil.
Ready to serve!
